Our brilliant Sicilian olive oil from the great Manfredi Barbera is a monocultivar again this year, the beautiful Biancolilla olive. It was crushed in stainless steel extractors without adding water. The olives are from groves at 600 meters, between Palermo and Agrigento. There are no flies at this height! The trees are on the slopes of Monte Sicani. Hand-harvested and milled within hours, not days.The tasting profile is profound — herbs, cut grass. The finish is almonds and green tomato. It is perfect for slashing across grilled steak yet not too bold for fish and seafood and certainly for salads, vinaigrettes, soups and couscous. Our kitchen and table are defined by this Western Sicilian and boy, were we happy when the new barrels got here.
